1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

1 cup wild rice (uncooked)

1 medium onion (diced)

2 carrots (sliced)

2 celery stalks (sliced)

3 cloves garlic (minced)

1 cup mushrooms (sliced)

1 teaspoon dried thyme

1 teaspoon dried sage

6 cups low-sodium chicken broth

1 cup heavy cream

1/2 cup frozen peas

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley (chopped, for garnish)

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add diced onions, carrots, and celery. Sauté for 5-7 minutes until the vegetables are tender and the onions are translucent.

    Add Garlic and Mushrooms: Stir in the minced garlic and sliced mushrooms, cooking for an additional 3-4 minutes until the mushrooms release their moisture and begin to brown.
