1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 medium onion, thinly sliced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

3 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup (240ml) heavy cream

1 cup (about 4 oz) shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Corn or flour tortillas (for serving)

Instructions
 

Heat the Skillet: In a large skillet, heat olive oil over medium heat.

    Cook the Chicken: Add the sliced chicken to the skillet. Season with salt, black pepper, chili powder, cumin, and smoked paprika. Sauté until the chicken is cooked through and browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the sliced onion and bell peppers. Cook for about 5 minutes or until the vegetables are tender, stirring frequently. Add the minced garlic and cook for an additional minute.

        Add Cream: Lower the heat and return the chicken to the skillet. Pour in the heavy cream and stir to combine, letting it simmer for about 3-4 minutes until it thickens slightly.
