2 cups elbow macaroni

1 cup broccoli florets

1 cup cherry tomatoes, halved

1 cup diced cucumber

1/2 cup red onion, finely chopped

1/2 cup carrots, shredded

1/2 cup mayonnaise

1/4 cup Greek yogurt

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

1/4 cup fresh parsley, chopped for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water until cool. Set aside.
