Creamy Corn & Avocado Salsa

Ingredients
  

2 cups fresh sweet corn (about 3-4 ears) or 1 can (15 oz) of sweet corn, drained

1 ripe avocado, diced

1 medium tomato, finely diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeds removed and finely chopped (optional for heat)

Juice of 1 lime

1/3 cup Greek yogurt or sour cream

Salt and pepper to taste

Prep the Corn: If using fresh corn, bring a pot of water to boil and add the corn. Boil for 3-5 minutes, just until tender. Drain and cool slightly. If using canned corn, simply drain and set aside.

    Combine Ingredients: In a large mixing bowl, combine the corn, diced avocado, tomato, red onion, cilantro, and jalapeño (if using). Gently stir to mix, being careful not to mash the avocado.

      Make It Creamy: In a small bowl, whisk together the Greek yogurt (or sour cream) and lime juice until well combined. Season with salt and pepper to taste.

        Mix Together: Pour the creamy mixture over the corn and avocado salad. Gently fold everything together until all ingredients are coated in the creamy dressing, adjusting seasoning as needed.
