Ingredients

8 oz linguine pasta

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

3 tbsp unsalted butter

2 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream

1/2 cup chicken broth

1 tsp smoked paprika

1 tsp chili powder

1/2 tsp cayenne pepper (adjust for heat preference)

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup fresh parsley, chopped

1/2 cup grated Parmesan cheese

Juice of 1 lemon

Instructions

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Sear the Chicken: In a large skillet over medium-high heat, melt 1 tablespoon of butter. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté Aromatics: In the same skillet, add the remaining butter, along with the minced garlic and chopped onion. Sauté for 2-3 minutes until the onion becomes translucent and fragrant.

Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Add in the smoked paprika, chili powder, and cayenne pepper. Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.

Combine Chicken and Pasta: Return the cooked chicken to the skillet, along with the cherry tomatoes. Stir in the cooked linguine and mix everything gently to coat the pasta in the creamy sauce. If the sauce is too thick, add a little of the reserved pasta water until you reach the desired consistency.

Final Touches: Add the chopped parsley and grated Parmesan cheese, stirring until well blended. Squeeze in the lemon juice for a fresh burst of flavor. Taste and adjust the seasoning with salt and pepper if needed.

Serve: Serve the creamy cowboy butter chicken linguine warm, garnished with additional parsley and Parmesan if desired.
