1 lb (450g) boneless skinless chicken breasts

8 cups low-sodium chicken broth

3 cups wide egg noodles

1 (8 oz) package cream cheese, softened

1 cup shredded cheddar cheese

1 cup frozen sweet corn

1 cup diced carrots

1 stalk celery, diced

1 small onion, finely chopped

3 cloves garlic, minced

2 tablespoons ranch seasoning mix

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: In a large pot, heat olive oil over medium heat. Add the chopped onion, celery, and carrots. Sauté for about 5 minutes until the vegetables begin to soften.

    Cook the Chicken: Add the boneless chicken breasts to the pot. Pour in the chicken broth and bring to a gentle boil. Reduce heat, cover, and simmer for about 20-25 minutes, or until the chicken is cooked through.

      Shred the Chicken: Remove the chicken from the pot and set it aside to cool slightly. Once cool enough to handle, shred the chicken using two forks.

        Make it Creamy: In the same pot, stir in the cream cheese, ranch seasoning mix, Italian seasoning, and garlic. Mix until the cream cheese is fully incorporated. Add the shredded chicken back into the soup.

          Add Noodles and Corn: Bring the mixture back to a simmer and add the wide egg noodles and corn. Cook for about 8-10 minutes, or until the noodles are tender.

            Cheesy Goodness: Once the noodles are cooked, stir in the shredded cheddar cheese and cook for an additional 2 minutes until the cheese is melted and the soup is creamy. If the soup is too thick, you can add more chicken broth to reach your desired consistency.

              Season to Taste: Taste the soup and adjust seasoning with salt and pepper if needed.
