Ingredients
  

1 cup orzo pasta

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup feta cheese, crumbled

1/4 cup plain Greek yogurt

1/4 cup olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil or parsley for garnish

Zest and juice of 1 lemon

Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.
