Ingredients

2 cups fresh figs, stems removed and quartered

1 cup water

1 tablespoon honey (adjust based on sweetness preference)

1 tablespoon lemon juice

1 cup coconut milk (or heavy cream for a richer flavor)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Pinch of salt

Fresh mint leaves, for garnish

Toasted walnuts or almonds, for topping (optional)

Instructions

Prepare the Figs: In a medium saucepan, combine the quartered figs and water. Bring to a gentle simmer over medium heat, stirring occasionally, until the figs are soft and mushy, about 10-15 minutes.

Blend the Mixture: Remove the saucepan from heat. Using an immersion blender, puree the fig mixture until smooth. If you don’t have an immersion blender, carefully transfer the mixture to a countertop blender and pulse until smooth.

Flavoring the Soup: Stir in the honey, lemon juice, coconut milk, vanilla extract, cinnamon, and a pinch of salt into the pureed mixture. Return the soup to low heat and let it warm through for about 5-7 minutes, stirring occasionally.

Adjust the Consistency: If you prefer a thinner soup, add a little more water or coconut milk until you reach your desired consistency. Taste and adjust sweetness or acidity as necessary.

Serve: Ladle the creamy fig jam soup into bowls. Garnish with fresh mint leaves and top with toasted walnuts or almonds if desired for added crunch.

Enjoy: This soup can be served warm or chilled, making it a versatile dish perfect for any season!
