4 salmon fillets (6 oz each, skin-on or skinless)

2 tablespoons olive oil

Salt and pepper, to taste

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 cup heavy cream

1 teaspoon Dijon mustard

1 tablespoon fresh lemon juice

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Lemon slices (for serving)

Instructions
 

Prepare the Salmon: Pat the salmon fillets dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets, skin-side down (if using skin-on). Cook for about 4-5 minutes, until the salmon is golden and easily releases from the pan. Carefully flip the fillets and cook for an additional 3-4 minutes, or until cooked through. Transfer the salmon to a plate and cover loosely to keep warm.

      Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium. Add 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

        Add the Cream: Pour in the heavy cream and stir to combine. Allow it to simmer gently for 2-3 minutes, then stir in the Dijon mustard, lemon juice, and Italian seasoning.

          Finish the Sauce: Add the remaining 2 tablespoons of butter, whisking until fully melted and incorporated into the sauce. Taste and adjust the seasoning with additional salt and pepper as needed.

            Combine and Serve: Return the salmon fillets to the skillet, spooning the creamy garlic butter sauce over them. Let them cook together for another minute to warm through.
