Ingredients

1 large head of cauliflower, chopped into florets

4 cloves of garlic, minced

1/2 cup cream cheese (or vegan cream cheese for a dairy-free option)

1/4 cup milk (or plant-based milk)

2 tablespoons unsalted butter (or olive oil for vegan)

Salt and pepper, to taste

1/4 teaspoon nutmeg (optional)

Fresh chives or parsley for garnish

Instructions

Prepare the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 8-10 minutes or until they are fork-tender. Drain well and let them cool for a few minutes.

Sauté the Garlic: In a small skillet, melt the butter (or heat the olive oil) over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and golden, being careful not to burn it.

Mash the Cauliflower: In a food processor or large mixing bowl, combine the drained cauliflower, sautéed garlic, cream cheese, and milk. Blend or mash until the mixture is smooth and creamy. You may add more milk if you desire a thinner consistency.

Season the Mash: Stir in the salt, pepper, and nutmeg (if using). Taste and adjust the seasoning to your preference.

Serve and Garnish: Transfer the creamy garlic cauliflower mash to a serving bowl. Garnish with chopped chives or parsley for a pop of color and freshness.

Enjoy: Serve warm as a delicious and healthier alternative to traditional mashed potatoes.
