Creamy Garlic Mashed Cauliflower

1 large head of cauliflower, trimmed and cut into florets

4 cloves garlic, peeled

1/4 cup cream cheese, softened

1/2 cup unsweetened almond milk (or your preferred milk)

1/4 cup grated Parmesan cheese

2 tablespoons unsalted butter

Salt and pepper, to taste

Fresh chives or parsley, for garnish (optional)

Instructions
 

Boil Cauliflower and Garlic: In a large pot, bring salted water to a boil. Add the cauliflower florets and garlic cloves. Cook for about 10-12 minutes, or until the cauliflower is tender.

    Drain and Cool: Once cooked, drain the cauliflower and garlic and allow them to cool for a minute. Make sure to remove any excess water as it could make the mash watery.

      Blend the Ingredients: In a food processor, combine the cooked cauliflower, garlic, cream cheese, almond milk, Parmesan cheese, and butter. Blend until smooth.

        Season to Taste: Add salt and pepper gradually, blending and tasting until you achieve your desired flavor. Adjust the creaminess by adding more almond milk if needed.
