8 oz penne pasta

2 tbsp olive oil

1 medium onion, finely diced

2 cloves garlic, minced

1 cup roasted Hatch green chiles, diced (fresh or canned)

1 cup heavy cream

1 cup chicken or vegetable broth

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper, to taste

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese, softened

1/4 cup fresh cilantro, chopped (for garnish)

1 lime, juiced (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add the finely diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
