Ingredients

1 lb boneless, skinless chicken breasts (cubed)

1 cup orzo pasta

4 cups chicken broth

1 cup heavy cream

1 medium onion (finely chopped)

3 garlic cloves (minced)

2 medium carrots (diced)

2 celery stalks (diced)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 lemon (zested and juiced)

2 tablespoons olive oil

Salt and pepper (to taste)

Fresh parsley (for garnish)

Instructions

Cook the Chicken: In a large pot, heat olive oil over medium heat. Add cubed chicken and season with salt and pepper. Sauté for about 5-7 minutes or until cooked through. Remove chicken from the pot and set aside.

Sauté Vegetables: In the same pot, add chopped onion, carrots, and celery. Sauté for about 5 minutes until vegetables are softened. Stir in minced garlic and cook for an additional minute until fragrant.

Simmer the Soup: Pour in the chicken broth and bring the mixture to a simmer. Add orzo pasta and dried herbs (thyme and oregano). Cook according to package instructions, about 8-10 minutes, stirring occasionally until orzo is al dente.

Make it Creamy: Once orzo is cooked, reduce heat to low. Stir in heavy cream, lemon zest, and lemon juice. Mix well to combine, then return the cooked chicken to the pot. Taste and adjust seasoning with salt and pepper as needed.

Garnish and Serve: Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot and enjoy the creamy, zesty flavor!
