1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

4 cups vegetable broth

1 cup heavy cream

Zest of 1 large lemon

Juice of 1 large lemon

1 cup fresh spinach, chopped

1/2 cup fresh parsley, chopped

1/2 cup freshly grated Parmesan cheese

Salt and pepper, to taste

Optional: additional lemon wedges and fresh herbs for garnish

Cook the Orzo: In a large saucepan, bring vegetable broth to a gentle boil. Add the orzo and cook until al dente, according to package instructions (about 8-10 minutes). Stir occasionally to prevent sticking.

    Prepare the Base: While the orzo is cooking, heat the olive oil in a separate skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Make it Creamy: Once the orzo is cooked, drain it (if needed) and add it directly to the skillet with the onion and garlic mixture. Reduce the heat to low and pour in the heavy cream. Stir well to combine.
