1 cup elbow macaroni

1 tablespoon unsalted butter

1 tablespoon all-purpose flour

1 cup whole milk

1 ½ cups shredded sharp cheddar cheese

½ cup grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

2 large eggs

½ cup breadcrumbs

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with non-stick spray.

    Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until it becomes slightly golden. Gradually pour in the milk, whisking continuously until the mixture thickens, about 3-5 minutes.

        Add the Cheeses: Remove the pot from heat and add the cheddar cheese, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, mixing well to ensure every piece is coated.

            Prepare the Muffin Mixture: In a separate bowl, whisk together the eggs. Gradually add the macaroni and cheese mixture to the eggs, mixing until combined.

              Fill the Muffin Tin: Spoon the macaroni and cheese mixture into the greased muffin tin, filling each cup to the top. Sprinkle a handful of breadcrumbs on top for added texture.

                Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and the muffins are set.
