4 boneless, skinless chicken thighs

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (such as cremini or button)

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 cup chicken broth

3/4 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove them from the skillet and set aside on a plate.

      Sauté the Vegetables: In the same skillet, add the chopped onion and cook for 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet, and cook for about 5 minutes, stirring occasionally, until they soften and release their juices.

            Create the Sauce: Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Bring to a gentle simmer, then reduce the heat to low.
