Creamy Mushroom Chicken Thighs

4 boneless, skinless chicken thighs

1 tablespoon olive oil

1 tablespoon butter

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces cremini or button mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 cup chicken broth

1 cup heavy cream

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Once the oil is hot, add the chicken thighs and sear for about 5-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, reduce the heat to medium. Add the butter, then the chopped onions. Sauté until the onions are translucent (about 3-4 minutes). Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet, along with the dried thyme and rosemary. Sauté the mushrooms for about 5-7 minutes until they become tender and lightly browned.

        Create the Sauce: Pour in the chicken broth and scrape the bottom of the skillet to release any brown bits stuck to it. Bring the mixture to a simmer, then reduce the heat to low. Stir in the heavy cream and continue to cook for about 2-3 minutes until the sauce thickens slightly.

          Combine Chicken and Sauce: Return the seared chicken thighs to the skillet, spooning the creamy mushroom sauce over them. Allow to simmer for 5 more minutes to meld the flavors and warm the chicken through.
