8 oz (225g) fettuccine or spaghetti

2 tablespoons olive oil

2 tablespoons unsalted butter

1 medium onion, finely chopped

4 cloves garlic, minced

12 oz (340g) mushrooms, sliced (cremini or button mushrooms work well)

1 teaspoon dried thyme

Salt and pepper to taste

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté Aromatics: In a large skillet over medium heat, heat olive oil and butter until melted. Add the chopped onions and sauté for about 3-4 minutes, until translucent. Stir in the minced garlic and cook for an additional minute, until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Sprinkle with dried thyme, salt, and pepper. Cook for about 7-8 minutes, stirring occasionally, until the mushrooms are golden brown and tender.

        Make the Creamy Sauce: Lower the heat and pour in the heavy cream. Stir to combine with the mushroom mixture, and let it simmer for 3-4 minutes until slightly thickened. Gradually mix in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.

          Combine Pasta and Sauce: Add the drained pasta to the skillet and toss gently until the pasta is coated with the creamy mushroom sauce. Taste and adjust seasoning if needed.
