12 oz (340g) pasta of your choice (penne or fusilli work great)

1 lb (450g) boneless, skinless chicken breasts, diced

2 tbsp olive oil

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

2 cups fresh baby spinach

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Red pepper flakes (optional, for heat)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Chicken: In the same pot, heat the olive oil over medium heat. Add the diced chicken, season with Italian seasoning, salt, and pepper. Cook, stirring occasionally, until the chicken is golden brown and fully cooked (about 6-8 minutes). Remove chicken from the pot and set aside.

      Sauté the Garlic: In the remaining oil and chicken juices, add the minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn it.

        Make the Cream Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer. Let it cook for about 3-4 minutes, allowing it to thicken slightly.

          Add Spinach and Chicken: Stir in the fresh spinach and cooked chicken. Gently fold in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.

            Combine with Pasta: Add the cooked pasta directly to the sauce in the pot. Toss everything together until the pasta is well coated in the creamy sauce. Adjust seasoning with salt, pepper, and red pepper flakes if using.
