12 oz fettuccine or linguine pasta

1 cup pumpkin puree (canned or homemade)

1 cup heavy cream

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper (or to taste)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Additional Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain the pasta and set aside, reserving about 1 cup of pasta water.

    Prepare the Alfredo Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

      Add Pumpkin and Cream: Stir in the pumpkin puree and heavy cream. Mix well until smooth and warmed through.

        Season the Sauce: Add the grated Parmesan cheese, nutmeg, cinnamon, salt, and pepper. Stir until the cheese melts and the sauce becomes creamy. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet with the pumpkin Alfredo sauce. Toss until the pasta is well coated with the sauce.
