Creamy Pumpkin Mac & Cheese

8 oz elbow macaroni

1 cup pumpkin puree (canned or fresh)

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup whole milk

1/2 cup heavy cream

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp nutmeg (freshly grated if possible)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (for topping)

1/4 cup breadcrumbs (for topping)

1 tbsp olive oil or melted butter (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a large saucepan over medium heat, combine the pumpkin puree, whole milk, heavy cream, garlic powder, onion powder, smoked paprika, nutmeg, and salt and pepper. Stir until well combined and warmed through.

      Add the Cheese: Gradually add the shredded cheddar and mozzarella cheese into the pumpkin mixture, stirring continuously until the cheese is melted and the sauce is smooth and creamy.

        Combine Pasta and Sauce: Add the drained macaroni into the cheese sauce, stirring until the pasta is well coated.

          Prepare the Topping: In a small bowl, mix the breadcrumbs with the grated Parmesan cheese and olive oil or melted butter until combined.

            Assemble and Bake: Preheat your oven to 350°F (175°C). Transfer the cheesy pasta mixture into a greased 9x13 inch baking dish. Evenly sprinkle the breadcrumb mixture on top.
