1 head of garlic

1 tablespoon olive oil

1 cup cream cheese, softened

1/4 cup sour cream

1/4 teaspoon sea salt

1/4 teaspoon black pepper

1 tablespoon fresh chives, finely chopped (plus extra for garnish)

1 teaspoon lemon juice

Optional: 1/4 teaspoon smoked paprika for a smoky twist

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut off the top of the garlic head to expose the tips of the cloves. Drizzle 1 tablespoon of olive oil over the garlic, wrapping it in aluminum foil. Roast for 30-35 minutes until the cloves are soft and caramelized. Allow to cool slightly.

    Prepare the Spread: Once the roasted garlic is cool enough to handle, squeeze the cloves out of their skins into a medium mixing bowl. Add the cream cheese, sour cream, sea salt, black pepper, fresh chives, lemon juice, and optional smoked paprika.

      Mix Together: Using a fork or a hand mixer, blend all the ingredients until smooth and creamy. Taste for seasoning and adjust if needed.

        Chill: Transfer the creamy roasted garlic spread to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld together.
