Ingredients

1 package (about 1 lb) potato gnocchi

2 large red bell peppers

1 large yellow bell pepper

1 small onion, diced

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Roast the Peppers: Preheat your oven to 425°F (220°C). Cut the red and yellow bell peppers in half, removing seeds and stems. Place them cut-side down on a baking sheet lined with parchment paper. Roast for about 25-30 minutes or until the skins are blistered and charred. Remove from oven and let cool for 10 minutes. Once cool enough to handle, peel off the skins and dice the peppers.

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface. This usually takes about 2-3 minutes. Drain and set aside.

Make the Sauce: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Combine Peppers and Cream: Add the roasted, diced peppers to the skillet along with the heavy cream. Stir to combine and let it simmer for about 5 minutes to allow the flavors to meld together.

Add Cheese and Seasoning: Stir in the grated Parmesan cheese and Italian seasoning. Mix until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.

Combine with Gnocchi: Gently fold the cooked gnocchi into the creamy pepper sauce, ensuring that each piece is generously coated.

Serve: Plate the creamy roasted pepper gnocchi and garnish with fresh basil leaves if desired. Enjoy your delicious meal!
