2 large red bell peppers

1 cup cream cheese, softened

1/2 cup Greek yogurt

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon lemon juice

1 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

Fresh herbs (e.g., parsley or basil) for garnish

Roast the Peppers: Preheat your oven to 450°F (230°C). Place the whole red bell peppers on a baking sheet and roast them in the preheated oven for about 20-25 minutes, turning occasionally, until the skin is charred and blistered.

    Cool and Peel: Once roasted, remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap or a towel for about 10-15 minutes to steam. This will make it easier to peel off the skin. After steaming, peel the charred skin away from the peppers, then deseed and roughly chop them.

      Blend Ingredients: In a food processor, combine the roasted red peppers, cream cheese, Greek yogurt, olive oil, minced garlic, lemon juice, smoked paprika, salt, and black pepper. Blend until smooth and creamy. Taste and adjust seasoning if needed.
