Creamy Roasted Red Pepper Dip

2 large red bell peppers

1 cup cream cheese, softened

½ cup sour cream

¼ cup mayonnaise

1 clove garlic, minced

1 tablespoon lemon juice

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

2 tablespoons fresh basil, chopped (for garnish)

Pita chips or fresh veggies (for serving)

Instructions
 

Roast the Peppers: Preheat your oven to 450°F (230°C). Line a baking sheet with foil for easy cleanup. Place the whole red bell peppers on the baking sheet and roast in the oven for about 25-30 minutes, turning occasionally, until the skin is blistered and charred.

    Cool and Peel: Remove the peppers from the oven and place them in a bowl, covering the bowl with plastic wrap for about 10-15 minutes. This will help steam the peppers and make peeling easier. Once cool enough to handle, peel off the charred skin, remove the stem and seeds, and roughly chop the peppers.

      Blend the Base: In a food processor, combine the roasted red peppers, softened cream cheese, sour cream, mayonnaise, minced garlic, lemon juice, smoked paprika, cayenne pepper (if using), and a pinch of salt and pepper. Blend until the mixture is smooth and creamy, scraping down the sides if needed.

        Taste and Adjust: Taste the dip and adjust seasoning as necessary, adding more salt, pepper, or lemon juice according to your preference.

          Chill the Dip: Transfer the dip to a serving bowl, cover with plastic wrap, and refrigerate for at least 30 minutes. Chilling allows the flavors to meld beautifully.
