Ingredients
  

1 cup canned chickpeas, drained and rinsed

1 large red bell pepper

2 tablespoons tahini

2 tablespoons fresh lemon juice (about 1 lemon)

2 tablespoons extra virgin olive oil

1 garlic clove, minced

1/2 teaspoon ground cumin

Salt, to taste

Water, as needed (about 2-4 tablespoons)

Fresh parsley, for garnish

Paprika, for garnish

Pita bread or vegetable sticks, for serving

Instructions
 

Roast the Bell Pepper:

    - Preheat your oven to 450°F (232°C).

      - Cut the red bell pepper in half, remove the seeds and stems. Place the halves skin side up on a baking sheet lined with parchment paper.

        - Roast the pepper for about 20-25 minutes, or until the skin is charred and blistered.

          - Remove from the oven and immediately place in a bowl, covering it with plastic wrap to steam for about 10 minutes. This will make peeling easier.

            Prepare the Hummus Base:

              - Once the pepper is cool enough to handle, peel off the charred skin and discard it. Roughly chop the roasted pepper.

                - In a food processor, combine the chickpeas, tahini, roasted red pepper, lemon juice, olive oil, minced garlic, ground cumin, and salt.

                  Blend to Creamy Perfection:

                    - Process the mixture on high until smooth, adding water one tablespoon at a time until desired consistency is reached. Blend for an additional 1-2 minutes to get it really creamy.

                      Taste and Adjust:

                        - Taste the hummus and adjust seasoning, adding more salt or lemon juice as preferred.

                          Serve:

                            - Transfer the hummus to a serving bowl. Drizzle with a little extra olive oil, sprinkle paprika, and garnish with chopped parsley.

                              - Serve with pita bread, vegetable sticks, or your favorite dipping snacks.
