Creamy Roasted Tomato & Garlic Pull-Apart Pasta

1 lb (450g) fresh rigatoni pasta

2 cups cherry tomatoes, halved

1 bulb of garlic, separated into cloves (unpeeled)

3 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 tsp dried basil

1/2 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Vegetables: On a baking sheet, combine the halved cherry tomatoes and unpeeled garlic cloves. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt, pepper, and dried basil. Toss gently to coat. Spread them out in a single layer and roast for 25-30 minutes, or until the tomatoes are blistered and the garlic is soft.

      Cook the Pasta: While the tomatoes and garlic are roasting, bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside.

        Prepare the Creamy Sauce: Once the tomatoes and garlic are done roasting, remove them from the oven. Squeeze the roasted garlic cloves out of their skins into a bowl. Mash them lightly with a fork. Add the roasted tomatoes and their juices to the bowl.

          Combine Ingredients: In a large mixing bowl, combine the roasted tomato and garlic mixture with the heavy cream, half of the mozzarella cheese, and half of the Parmesan cheese. Mix until everything is well combined.

            Mix Pasta & Sauce: Add the cooked rigatoni to the bowl. Toss everything together until the pasta is completely coated in the creamy mixture.

              Assemble for Baking: Grease a large baking dish with the remaining olive oil. Transfer the creamy pasta mixture into the dish. Top with the remaining mozzarella and Parmesan cheese.

                Bake: Place the dish in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown on top.

                  Garnish and Serve: Once baked, remove the pasta from the oven and let it cool slightly. Garnish with fresh basil before serving. Enjoy the pull-apart goodness!
