2 cups vegetable broth

1 cup heavy cream (or coconut milk for a vegan option)

Roast the Vegetables: Preheat your oven to 400°F (200°C). In a large baking dish, place the halved tomatoes, quartered onion, and unpeeled garlic cloves. Drizzle with olive oil and sprinkle with salt, pepper, thyme, and basil. Toss to coat all the veggies evenly. Roast in the preheated oven for 30-35 minutes or until the tomatoes are caramelized and the onions are soft.
