Creamy Spinach Artichoke Pasta

12 oz (340g) pasta of your choice (fettuccine or penne work well)

1 cup fresh spinach, chopped

1 cup artichoke hearts, drained and chopped

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, diced

1 cup heavy cream

1 cup cream cheese, softened

1 cup grated Parmesan cheese

1 teaspoon lemon juice

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta water.

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-5 minutes. Then, add minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Add Spinach and Artichokes: Stir in the chopped spinach and artichoke hearts, cooking until the spinach wilts, approximately 2-3 minutes.

        Create the Creamy Sauce: Lower the heat and add in the heavy cream and softened cream cheese, stirring constantly until the cream cheese is fully melted and the mixture is smooth.

          Incorporate Cheese and Seasoning: Gradually add the grated Parmesan cheese while stirring. Add the lemon juice and red pepper flakes (if using). Mix well until the sauce is creamy and smooth. If the sauce is too thick, add some reserved pasta water to achieve the desired consistency.

            Combine Pasta with Sauce: Add the cooked pasta to the skillet and toss to coat the pasta evenly with the sauce. Season with salt and pepper to taste. If the sauce appears too thick, add more reserved pasta water until you reach your preferred creaminess.

              Serve: Once well combined, serve the pasta warm, garnished with fresh basil and extra Parmesan if desired.
