1 cup sun-dried tomatoes (packed in oil, drained and chopped)

2 cups baby spinach

3 cloves garlic (minced)

1 cup heavy cream

1 cup grated Parmesan cheese (plus extra for serving)

2 tablespoons olive oil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh basil leaves (for garnish)

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions. Once they float to the top (usually around 2-3 minutes), strain them and set aside.
