Creamy Sun-Dried Tomato Shrimp Pasta

12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

1 cup sun-dried tomatoes (packed in oil), roughly chopped

3 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Red pepper flakes (optional, for heat)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the shrimp and season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes on each side or until the shrimp turn pink and opaque. Remove them from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the sun-dried tomatoes and cook for another minute.

        Create the Creamy Base: Lower the heat and pour in the heavy cream, stirring continually. Allow the mixture to simmer for about 3-4 minutes. Gradually mix in the Parmesan cheese until melted and combined, creating a smooth sauce.

          Combine Ingredients: Return the shrimp to the skillet and toss them in the creamy sauce. Add the cooked fettuccine to the skillet and gently mix everything together. If the sauce is too thick, gradually add a bit of the reserved pasta water until desired consistency is reached.
