2 cups rolled oats

1 cup creamy sunflower seed butter

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon salt

1/2 cup unsweetened shredded coconut

1/3 cup mini chocolate chips (optional)

1/3 cup dried fruit (such as raisins or cranberries, optional)

1/4 cup chia seeds or flaxseeds (for added nutrition)

Instructions
 

Prepare the Baking Dish: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, allowing some overhang for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, chia seeds (or flaxseeds), and salt. Mix well to combine these dry ingredients evenly.

      Combine Wet Ingredients: In another bowl, whisk together the sunflower seed butter, honey (or maple syrup), melted coconut oil, and vanilla extract until smooth and well combined.

        Incorporate Wet and Dry: Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is fully mixed. If you are adding chocolate chips and/or dried fruit, fold them in at this stage.

          Transfer to Baking Dish: Spread the mixture evenly into the prepared baking dish. Use a spatula or your fingers to firmly press it down, ensuring an even layer and compacting it well, which will help the bars hold together once baked.
