Ingredients

2 cups rolled oats

1 cup sunflower butter (smooth or crunchy)

1/2 cup honey or maple syrup

1/2 cup almond milk (or any non-dairy milk)

1/2 tsp vanilla extract

1/4 cup chia seeds (optional for extra nutrition)

1/2 tsp salt

1/2 cup dark chocolate chips (optional)

1/2 cup dried fruits (like cranberries or raisins, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, chia seeds (if using), and salt. Stir until well mixed.

Combine Wet Ingredients: In another bowl, mix together the sunflower butter, honey (or maple syrup), almond milk, and vanilla extract until smooth and well combined.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until evenly combined. If using, fold in the dark chocolate chips and dried fruits.

Transfer to Pan: Pour the mixture into the prepared baking dish. Use a spatula or the back of a spoon to press the mixture evenly into the dish.

Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are slightly golden and the center is firm to the touch.

Cool and Slice: Allow the oat bars to cool in the pan for about 15 minutes, then lift out using the parchment overhang. Transfer to a cutting board to cool completely before slicing into bars.

Store and Enjoy: Store the bars in an airtight container at room temperature for up to one week, or in the fridge for longer freshness. Enjoy as a snack or healthy breakfast!
