1 cup creamy peanut butter

1/4 cup soy sauce

2 tbsp honey or maple syrup

1 tbsp lime juice

1 tbsp sesame oil

1 tsp fresh ginger, grated

2 cloves garlic, minced

1/2 tsp red pepper flakes (adjust for spice preference)

1 cup shredded carrots

1 bell pepper, thinly sliced (any color)

1 cup snap peas or snow peas

3 green onions, sliced (for garnish)

1/4 cup chopped cilantro (for garnish)

Crushed peanuts (for garnish)

Cook the Noodles: Start by boiling a large pot of water. Cook the rice noodles according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
