Creamy Tomato Basil Soup with Grilled Cheese

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes (or 4 cups fresh tomatoes, peeled and chopped)

3 cups vegetable broth

1 cup heavy cream or coconut cream for a vegan option

1 teaspoon sugar (optional)

Salt and pepper to taste

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 tablespoon balsamic vinegar

4 slices of sourdough or your favorite bread

4 slices of cheddar cheese (or a dairy-free alternative)

Butter (or coconut oil for a vegan option) for grilling

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Add Tomatoes: Pour in the crushed tomatoes and vegetable broth. If using fresh tomatoes, let them cook down a bit before adding the broth. Stir well and bring to a simmer.

      Simmer: Let the soup simmer for about 15-20 minutes to meld the flavors, stirring occasionally. If desired, add a teaspoon of sugar to balance the acidity of the tomatoes.

        Blend the Soup: Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender (be careful with hot liquids!).

          Finish with Cream and Basil: Return the soup to a low heat and stir in the heavy cream (or coconut cream), mixing until well combined. Add the chopped basil and balsamic vinegar, and season with salt and pepper to taste. Allow it to warm through, then turn off the heat.

            Prepare the Grilled Cheese: Butter one side of each slice of bread. Heat a skillet over medium heat and place two slices, buttered side down, in the pan. Add a slice of cheese to each, then top with the remaining slices of bread, buttered side up.

              Grill: Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

                Serve: Ladle the creamy tomato basil soup into bowls, garnish with fresh basil, and serve with the grilled cheese sandwiches cut into quarters for dipping.
