Creamy Tomato Basil Tortellini Bake

12 oz cheese tortellini (fresh or frozen)

2 tbsp olive oil

3 cloves garlic, minced

1 small onion, diced

1 can (14.5 oz) diced tomatoes, drained

1 can (15 oz) tomato sauce

1 cup heavy cream

1 tsp dried basil

1 tsp dried oregano

½ tsp salt

½ tsp black pepper

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

      Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes. Add minced garlic and cook for an additional 1-2 minutes.

        Prepare the Sauce: Stir in the drained diced tomatoes, tomato sauce, and heavy cream. Add the dried basil, oregano, salt, and black pepper. Simmer for about 5 minutes, allowing the flavors to meld together.

          Combine Tortellini and Sauce: Add the cooked tortellini to the sauce mixture, stirring gently to combine and ensure all tortellini are coated in the creamy tomato sauce.

            Layer the Bake: In a greased 9x13 inch baking dish, pour half of the tortellini mixture. Sprinkle half of the mozzarella cheese and half of the Parmesan cheese on top. Repeat the layers with the remaining tortellini mixture and finish with the remaining mozzarella and Parmesan cheese.

              Bake: Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let it cool for a couple of minutes. Garnish with fresh basil leaves before serving.
