Creamy Tomato Basil Tortellini Soup

Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

4 cups vegetable or chicken broth

1 cup heavy cream

1 packet (9 ounces) refrigerated cheese tortellini

1 cup fresh basil leaves, chopped

1 teaspoon dried oregano

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes or until translucent.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Pour in the crushed tomatoes and vegetable or chicken broth. Bring the mixture to a simmer.

        Add the dried oregano, salt, and pepper, adjusting to your taste preferences.

          Stir in the tortellini, and let the soup simmer for about 5-7 minutes until the tortellini is tender.

            Lower the heat and gradually add the heavy cream, stirring to combine. Allow the soup to heat through, but do not let it boil.

              Remove the pot from heat and stir in the chopped basil leaves.

                Serve the soup hot, garnished with grated Parmesan cheese and a few extra basil leaves if desired.
