12 oz cheese tortellini

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 cup heavy cream

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (adjust for spice preference)

Salt and black pepper to taste

1 cup fresh spinach

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Tortellini: Start by boiling a large pot of salted water. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.

      Add Tomatoes: Pour in the diced tomatoes along with their juices. Stir well and let it simmer for about 3-4 minutes, allowing the flavors to meld together.

        Create the Creamy Sauce: Lower the heat and stir in the heavy cream, dried basil, dried oregano, and red pepper flakes. Season with salt and black pepper to taste. Let this mixture simmer for another 5 minutes, stirring occasionally.
