Creamy Wild Mushroom Pasta

3 cups mixed wild mushrooms (such as shiitake, chanterelles, and oyster), cleaned and sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 small onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional, for brightness)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Mushrooms: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.

      Add the Mushrooms: Add the sliced wild mushrooms to the skillet. Cook them for about 5-7 minutes, stirring occasionally, until they are tender and golden brown. Season with salt, pepper, and red pepper flakes if using.

        Create the Cream Sauce: Pour in the heavy cream and add the thyme. Bring the mixture to a gentle simmer and let it cook for about 3-5 minutes until it thickens slightly. Stir in the Parmesan cheese and mix until melted and creamy. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.
