Creamy Zucchini Pasta with Chicken

2 medium zucchini

8 oz (225g) pasta (fettuccine or linguine works best)

2 boneless, skinless chicken breasts

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil or parsley for garnish

Zest of 1 lemon

Instructions
 

Prepare the Zucchini:

    - Using a spiralizer or a vegetable peeler, create zucchini noodles (zoodles). If using a peeler, make long strips. Set aside.

      Cook the Pasta:

        - In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining. Set the drained pasta aside.

          Prepare the Chicken:

            - Season the chicken breasts with salt and black pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove from the skillet and let rest for a few minutes before slicing into strips.

              Make the Creamy Sauce:

                - In the same skillet, add another tablespoon of olive oil, and sauté the minced garlic until fragrant (about 1 minute).

                  - Add the heavy cream and bring to a gentle simmer. Mix in the grated Parmesan cheese and red pepper flakes, stirring until the cheese has melted and the sauce is smooth. If it becomes too thick, add some reserved pasta water to reach your desired consistency.

                    Combine All Ingredients:

                      - In the skillet with the creamy sauce, add the zucchini noodles and cooked pasta. Toss to coat the noodles and pasta in the creamy sauce. Stir in the sliced chicken, lemon zest, and adjust seasoning with salt and pepper as needed.

                        Serve:

                          - Plate the creamy zucchini pasta with chicken and garnish with fresh basil or parsley. Optionally, add more grated Parmesan cheese on top before serving.
