Creamy Zucchini Tomato Pasta

8 oz (225 g) fettuccine or pasta of your choice

2 medium zucchinis, diced

1 cup cherry tomatoes, halved

1 small onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Add Zucchini and Tomatoes: Stir in the diced zucchini and cherry tomatoes. Season with dried basil, dried oregano, salt, and pepper. Cook for about 5-7 minutes, stirring frequently, until the zucchini is tender and the tomatoes have softened.

        Make the Creamy Sauce: Reduce the heat to low. Pour in the heavy cream and bring to a gentle simmer. Gradually stir in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
