Crispy Baked Chicken Tenders with Honey Mustard

1 lb chicken tenders, trimmed

1 cup breadcrumbs (panko or regular)

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp cayenne pepper (optional)

Salt and pepper, to taste

1 tbsp olive oil

1/4 cup mayonnaise

1/4 cup Dijon mustard

2 tbsp honey

1 tbsp apple cider vinegar

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chicken: Pat the chicken tenders dry with paper towels. Season them lightly with salt and pepper on both sides.

      Set Up Breading Station: In three separate shallow bowls, set up your breading station.

        - In the first bowl, place the flour mixed with garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

          - In the second bowl, beat the eggs until well mixed.

            - In the third bowl, add the breadcrumbs and drizzle with olive oil, mixing lightly to coat the breadcrumbs for extra crunch.

              Bread the Chicken:

                - Dredge each chicken tender first in the flour mixture, shaking off the excess.

                  - Next, dip into the beaten eggs, allowing any excess to drip off.

                    - Finally, coat the chicken in the breadcrumb mixture, pressing gently to ensure it sticks. Place the breaded chicken tenders on the prepared baking sheet.

                      Bake: Bake the tenders in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, flipping halfway through cooking for even crispiness.
