Ingredients

4 large russet potatoes

1/4 cup olive oil

4 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1/4 cup grated Parmesan cheese (optional for extra flavor)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy clean-up.

Wash and Cut Potatoes: Scrub the russet potatoes under cold water to remove any dirt. Cut each potato into wedges by cutting them in half lengthwise, then cutting each half into 3-4 wedges, depending on your preferred thickness.

Prepare the Seasoning: In a large bowl, whisk together the olive oil, minced garlic, onion powder, smoked paprika, oregano, sea salt, black pepper, and cayenne pepper (if using).

Toss the Wedges: Add the potato wedges to the bowl and toss them in the garlicky olive oil mixture until they are evenly coated.

Arrange on Baking Sheet: Spread the seasoned potato wedges out in a single layer on the prepared baking sheet. Ensure there is space between each wedge for proper crisping.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes. Flip the wedges halfway through the cooking time to ensure they are golden and crispy on all sides.

Add Cheese (Optional): If you love cheese, sprinkle the grated Parmesan cheese over the wedges during the last 5 minutes of baking for an extra layer of flavor.

Finish and Serve: Once the wedges are crispy and a deep golden brown, remove them from the oven. Let them cool for a few minutes, then garnish with fresh chopped parsley before serving.

Enjoy: Serve your crispy baked garlic potato wedges with your favorite dipping sauce, such as sour cream, ketchup, or a spicy aioli.
