8 oz fresh mozzarella balls (bocconcini)

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Cooking spray or olive oil for drizzling

Marinara sauce for dipping

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Dredging Stations: Set up three shallow bowls—one with flour, one with beaten eggs, and another mixed with breadcrumbs, Parmesan cheese, garlic powder, dried Italian herbs, and a pinch of salt and pepper.

      Drain the Mozzarella: Pat the mozzarella balls dry with paper towels to remove excess moisture. This will help them become crispier during baking.

        Coat the Mozzarella: Take each mozzarella ball and dip it first in the flour, shaking off the excess. Then, dip it into the egg, allowing any excess to drip off, and finally coat it with the breadcrumb mixture, pressing gently to ensure an even coating.

          Arrange on Baking Sheet: Place the coated mozzarella rounds on the prepared baking sheet, making sure they are spaced apart to allow for even cooking.

            Spray or Drizzle: Lightly spray the tops of the mozzarella rounds with cooking spray or drizzle a small amount of olive oil over them to help achieve that golden, crispy texture.

              Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the mozzarella rounds are golden brown and crisp. For an extra crispy finish, broil for the last 2-3 minutes, keeping a close eye to avoid burning.
