Crispy Baked Tofu Stir-Fry Wraps

14 oz (400g) firm tofu, drained and pressed

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon cornstarch

2 tablespoons olive oil

1 red bell pepper, sliced

1 cup broccoli florets

1 medium carrot, julienned

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

3 green onions, chopped

1 tablespoon sesame oil

2 tablespoons hoisin sauce

Salt and pepper to taste

4 large lettuce leaves (Bib or Romaine)

Sesame seeds and cilantro for garnish (optional)

Instructions
 

Prepare the Tofu:

    - Preheat your oven to 400°F (200°C).

      - Cut the pressed tofu into bite-sized cubes. In a bowl, toss the tofu with soy sauce, ensuring each piece is coated. Allow it to marinate for about 10 minutes.

        Bake the Tofu:

          - After marinating, sprinkle cornstarch over the tofu cubes and toss gently until evenly coated. This will help create a crispy texture when baked.

            - Line a baking sheet with parchment paper. Spread the tofu cubes in a single layer. Drizzle with 1 tablespoon of olive oil and bake for about 25-30 minutes, flipping halfway through, until golden and crispy.

              Stir-Fry the Vegetables:

                - While the tofu is baking, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.

                  - Add garlic and ginger to the skillet, sautéing for about 30 seconds until fragrant.

                    - Toss in the red bell pepper, broccoli, and carrot. Stir-fry for about 5-7 minutes, or until the vegetables are tender yet still crisp.

                      - Reduce the heat to low, then add the crispy tofu, sesame oil, and hoisin sauce into the skillet. Stir well to combine all ingredients, allowing them to heat through. Season with salt and pepper to taste.

                        Assemble the Wraps:

                          - Take a large lettuce leaf and spoon a generous amount of the stir-fried tofu and vegetable mixture onto the center of the leaf.

                            - Optionally top with chopped green onions, sesame seeds, and fresh cilantro.

                              - Fold the sides of the lettuce leaf over the filling and roll it up to create a wrap.

                                Serve:

                                  - Serve the crispy baked tofu stir-fry wraps immediately, alongside any remaining hoisin sauce for dipping.
