Ingredients

2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

2 large eggs

1 tablespoon olive oil

Optional: Fresh parsley or basil for garnish

Optional: Marinara sauce or ranch dressing for dipping

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the Zucchini: Wash the zucchinis thoroughly. Trim the ends and slice each zucchini into sticks about ½ inch thick.

Set Up Breading Station: In a shallow bowl, whisk the eggs and olive oil together until well combined. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, dried oregano, paprika, salt, and pepper.

Coat the Zucchini: Dip each zucchini stick into the egg mixture, allowing excess to drip off. Then, roll it in the breadcrumb mixture until fully coated. Place the coated zucchini fries on the prepared baking sheet in a single layer.

Bake: Bake in the preheated oven for 20-25 minutes, flipping the fries halfway through, until they are golden brown and crispy.

Serve: Once cooked, remove from the oven and let cool slightly. Garnish with fresh herbs if desired. Serve immediately with marinara sauce or ranch dressing for dipping.
