1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup cooked quinoa (optional, for added texture and nutrition)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 clove garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup fresh cilantro, chopped (plus extra for garnish)

1 cup shredded cheese (cheddar or Oaxaca work great)

12 small corn tortillas

Vegetable oil (for frying)

Optional toppings: avocado slices, salsa, or crema

Prepare Filling: In a large bowl, mash the black beans with a fork until slightly chunky. Stir in the corn, quinoa (if using), cumin, smoked paprika, garlic, salt, pepper, cilantro, and half of the cheese until well combined.

    Warm Tortillas: To make the tortillas pliable, heat a skillet over medium heat and warm each tortilla for about 30 seconds on each side, or until soft. This will prevent them from cracking when rolling.

      Fill and Roll: Take one warm tortilla and place about 2 tablespoons of the black bean mixture in the center. Sprinkle a bit of cheese on top, then roll the tortilla tightly, tucking in the sides as you go. Repeat with the remaining tortillas and filling.

        Fry Taquitos: In a deep frying pan, heat about 1 inch of vegetable oil over medium heat.
