2 cups finely shredded green cabbage

1 cup grated carrots

1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup all-purpose flour

1/4 cup cornmeal

1 large egg, beaten

1/2 teaspoon baking powder

1 teaspoon cumin powder

1 teaspoon paprika

Salt and pepper to taste

1/4 cup fresh herbs (parsley or cilantro), chopped

Vegetable oil for frying

Prepare the Vegetables: In a large bowl, combine the shredded cabbage, grated carrots, chopped onion, and minced garlic. Mix well until evenly distributed.

    Mix the Dry Ingredients: In another bowl, whisk together the all-purpose flour, cornmeal, baking powder, cumin, paprika, salt, and pepper until well combined.

      Combine Mixtures: Add the dry mixture to the vegetables and stir to coat. Then, add the beaten egg and mix until everything is well combined. If the mixture seems too loose, add a little more flour until you achieve a thick, moldable consistency. Fold in the chopped herbs.

        Heat the Oil: In a large frying pan, heat about 1/2 inch of vegetable oil over medium heat. To test if the oil is ready, drop a small spoonful of the mixture into the pan; it should sizzle upon contact.

          Fry the Fritters: Using a spoon or your hands, scoops out tablespoon-sized amounts of the mixture, gently placing them into the hot oil. Flatten them slightly with the back of the spoon. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
