1 lb chicken tenderloins

1 cup buttermilk

1 tablespoon hot sauce (optional for a kick)

1 cup all-purpose flour

1/2 cup cornmeal

2 teaspoons Cajun seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (adjust for heat preference)

Oil for frying (canola or vegetable oil)

Instructions
 

Marinate the Chicken: In a bowl, combine the buttermilk and hot sauce (if using). Add the chicken tenderloins and ensure they are fully submerged. Cover and refrigerate for at least 1 hour or up to overnight for maximum flavor.

    Prepare the Coating: In a large mixing bowl, combine the all-purpose flour, cornmeal, Cajun seasoning, garlic powder, onion powder, smoked paprika, black pepper, salt, and cayenne pepper. Mix thoroughly until well combined.

      Heat the Oil: In a large skillet or deep frying pan, add enough oil to cover the bottom by about 1/2 inch. Heat over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the flour mixture into it; it should sizzle immediately.

        Coat the Chicken: Remove chicken tenders from the buttermilk marinade, allowing excess to drip off. Dredge each tender in the flour mixture, pressing lightly to ensure an even coating. Shake off any excess flour and place coated tenders on a plate.

          Fry the Chicken: Carefully place a few tenders in the hot oil, being careful not to overcrowd the pan. Fry for about 4-5 minutes per side or until golden brown and crispy. The internal temperature should reach 165°F (75°C).
