4 large ears of corn

1 cup buttermilk

1 tablespoon hot sauce (adjust to taste)

1 cup all-purpose flour

1/2 cup cornmeal

2 teaspoons Cajun seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional for extra heat)

Salt and pepper to taste

Vegetable oil for frying

Prep the Corn: Carefully slice the corn cobs in half lengthwise, then cut each half into three equal pieces to create riblets. You should have about 24 riblets. Set aside.

    Marinate the Corn: In a large bowl, whisk together buttermilk and hot sauce. Add the corn riblets to the mixture, ensuring they are well-coated. Let them marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for deeper flavor.

      Prepare the Dry Mix: In another bowl, combine the flour, cornmeal, Cajun seasoning, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Mix thoroughly.
